Chewy Granola Bar Squares (gluten free)

Although this recipe does not work for school lunches (due to the peanut butter), it makes a great morning or afternoon snack. It has a lot of similarities to a granola bar only the added flour makes it a little heavier.

I put peanuts, chocolate chips and topped it with mini m&m’s, but you could omit/add what you like to make a healthier version.  Also I substituted the wheat germ for gluten free flour, but again you can switch that to what you want/like. Regular flour works just as well.


  • 1/2 cup brown sugar
  • 2/3 cup peanut butter
  • 5 tbsp. corn syrup
  • 1/2 cup melted butter
  • 2 tsp vanilla
  • 3 cups gluten free oatmeal
  • 1/2 cup cereal (I used rice krispies, cheerios are good too)
  • 2/3 cup gluten free flour
  • 1/2 cup peanuts
  • 1 cup chocolate chips
  • 1/4 cup mini m&ms


  • Put brown sugar, peanut butter, corn syrup, vanilla and melted butter in a bowl
  • Mix until smooth
  • Add oatmeal, cereal, flour and peanuts
  • Mix together and add chocolate chips
  • Put into greased 9×13 pan
  • Top with mini m&ms
  • Cook at 350 degrees for 10-15 minutes or until the edges are a golden brown
