Gluten Free Banana Muffins(or bread)

Made these the other day, as I needed a gluten free snack for the afternoon.  My husband ate two hot off the press and gave his approval. Haha. Anyways the batter is quite thick, the recipe was originally for banana bread, but I made muffins out of it instead. If you do make bread with it, I would say it will make one very large loaf or two small. It made sixteen large muffins.

Ingredients:

  • 2 Cups Gluten Free Flour
  • 4 Large Ripe Bananas
  • 1/2 Cup Sugar
  • 1/2 Cup Margarine
  • 2 Eggs
  • 1/2 Tsp Vanilla
  • 1 Tsp Baking Powder
  • 1 Tsp Baking Soda
  • 1/4 Tsp Salt
  • Chocolate Chips (optional)

Directions:

  • Mash bananas, either by mixer or by hand
  • Mix in sugar, margarine, eggs and vanilla
  • Add remainder ingredients except chocolate chips
  • Add chocolate chips
  • Put into greased or lined muffin tin
  • Cook at 350 degrees for 15-20 minutes or until toothpick comes out clean

*If making banana bread, cook for 50 minutes or until toothpick comes out clean*
