Gluten Free Sugar Cookies

These cookies were so fun to make, the kids had a blast decorating them. Parchment paper. I have found this to be my best friend with any gluten free baking that has to be rolled out. Gluten free doughs tend to be sticky and using too much flour just dries it out, which eliminates rolling your cookie dough out in flour.  What I did was put my dough between two sheets of parchment paper and rolled it out. Once you have it to the desired thickness peel back the paper. Make sure to dip your cookie cutter in a little bit of flour to keep it from sticking.


  • 1/2 Cup Margarine
  • 1 Cup Sugar
  • 1 lg Egg
  • 1 tsp Vanilla
  • 1/2 tsp Almond Extract
  • 2 1/4 Gluten Free Flour
  • 1/2 tsp Salt


  • Mix margarine and sugar
  • Add egg, vanilla and almond extract
  • Slowly add dry ingredients
  • When it starts to form a ball take it out and finish by hand
  • Roll out between two parchment papers and cut into shapes
  • Put cookie shapes onto a parchment line baking sheet (can use it without but easier with)
  • Cook at 350 degrees until slightly browned on the edges
  • Cool and decorate using either Royal icing or Butter Cream icing
