Gluten Free Chocolate Crinkle Cookies

I made these the other day and boy were they a hit! I have made them non gluten free before, but this is the first time this way. Really easy to do, a little more time consuming than your regular drop cookies, just because it has a few steps.


  • 1/2 cup bittersweet chocolate chips
  • 6 tbsp. margarine
  • 1 1/2 cups gluten free flour
  • 5 tbsp cocoa powdered
  • 3/4 tsp baking powder
  • 1/8 tsp baking soda
  • 1/2 tsp salt
  • 1 cup white sugar
  • 2 tsp vanilla extract
  • 1 cup icing sugar
  • Line your baking sheets with parchment paper
  • Melt chocolate chips and margarine either by stove top or microwave
  • Set aside to cool slightly
  • Mix dry ingredients except icing sugar
  • Add the bowl of melted chocolate and margarine
  • Add the eggs and vanilla
  • Mix to combine (dough will be thick and soft)
  • Scoop into 24 pieces
  • Roll into balls (put a little flour or icing sugar on palms if too sticky) and roll intothe icing sugar to coat
  • Place onto parchment paper and flatten with palm
  • Cook in the oven at 350 degrees for 8- 10 minutes or until edges are hardened
