Gluten Free Chocolate Chip Muffins (AMAZING)

These gluten free muffins are so well liked in our house.  What I really love about them is that they stay moist. Even two days later when I put them in my daughters lunch they hadn’t gone dry and crumbly. Sometimes with gluten free breads they have a tendency to dry out quicker than the regular, so I was really happy when I found this recipe and the muffins stayed moist.


  • 2 cups gluten free flour
  • 3/4 cup white sugar
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/3 cup vegetable oil
  • 1 tsp vanilla
  • 1/2 cup chocolate chips (or however many you like)


  • Combine your wet ingredients
  • Add dry ingredients (excluding chocolate chips)
  • Mix well
  • Fold in chocolate chips
  • Put into muffin cups (greased or paper)
  • Cook at
  • 350 degrees for 15-20 min or until toothpick comes out clean (avoid overcooking)
  • Let cool
