Gluten Free Fried Chicken

A little while ago, we were running late and thought we would save the time and effort, and get chicken at the local grocery store. It was delicious as always, but my second oldest couldn’t have it. It is not gluten free because of the batter. I did cave and let her have the chicken as long as she didn’t eat the skin. She is not celiac but is sensitive to gluten. She was content with that, althought not entirely thrilled as the skin is her favourite part! However, I did make a promise to her that we would make our own sometime and so we did!

I used a recipe from pinterest and changed it a little according to what I had for spices. It was quite good and thoroughly enjoyed! The recipe said to marinate the chicken in the milk mix, I did do it but I don’t see much advantage to it. I think you could save time and soak the chicken while mixing the dry ingredients together.


  • Package chicken pieces
  •  2 1/2 cups buttermilk
  • 2 cups (280 g) basic gum free gluten free flour mix(1 1/4 cup  white rice flour + 1/2 potato starch + 1/4 cup tapioca starch/flour) (yes, you do have to use this blend!)
  • 1 teaspoon freshly ground black pepper
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon chili powder
  • 3 tablespoons sugar


  • Mix your liquids together, place thawed chicken pieces in milk mixture
  • Meanwhile, mix together dry ingredients
  • Put chicken pieces in flour mixture, coat chicken thoroughly (can also use large ziploc bag to coat chicken)
  • Put into deep fryer, use a meat thermometer to tell when chicken is done, if you are doing large chicken pieces it will take 20 min at least

***Don’t have buttermilk? No problem, use regular milk and add 1 tbsp vinegar for every cup, mix and let stand 5 minutes***
