Gluten Free Powdered Donuts

Its really no fun when we go through the Tim Horton’s drive thru and the only thing gluten free to eat, is their yogurt…without the granola!  So the other day, we got some donuts and of course, our second child couldn’t have any. Maybe to some it seems unfair that we would still get them, but do they all suffer because of one? At home we eat gluten free at meals, we buy gluten free noodles, cook with gluten free sauces or make our own. Its when we are out that I find it so hard to get gluten free fast food. Anyways this inspired me to make my own gluten free donuts so that she could have a donut  treat too.

I had picked up these pans one day while wondering through Canadian Tire. Super good deal! Both pans were on clearance paid about five bucks for them! They are the Wilton brand. I decided to start out with making the powdered donut, kind of the most basic as it is a cake batter, but I would like to try making some other donuts at a later date.

Ingredients:

  • 2 Large Eggs
  • 3/4 – 1 Cup Whole Milk
  • 1/4 Cup Vegetable oil
  • 1 1/2 Cups Gluten Free Flour
  • 2 Tsp Baking Powder
  • 1/4 Tsp Cinnamon
  • 1 Cup White Sugar
  • 1 Tsp Salt
  • 1 Cup Icing Sugar

Directions:

  • Mix together eggs, milk and oil
  • Mix in all dry ingredients, excluding the icing sugar
  • If the mixture seems too dry or thick at more milk
  • Grease donut pans
  • Carefully put in batter, filling 3/4 of the way
  • Cook at 350 degrees for 10 to 15 or until cooked
  • Cool slightly on cooling rack
  • Coat in icing sugar
