Pumpkin and Cream Cheese Swirl Muffins

If you like pumpkin, you have got to give these a taste…and aren’t they so pretty? These muffins are just the perfect thing for this time of year! This pumpkin muffin is moist and fluffy topped with a cream cheese swirl. The recipe calls for pumpkin spice but that is not something I use or have, so I substituted it with cinnamon and ginger (can also use nutmeg if you desire).

Ingredients For Pumpkin Batter:

  • 1 3/4 Cups Flour
  • 1 Tsp Baking Soda
  • 1/2 Tsp Salt
  • 1 Tsp Cinnamon (or 1/2 Tsp Cinnamon and 1/2 Tsp Nutmeg)
  • 1/4 Tsp Ginger
  • 15 oz Can of Pumpkin Puree
  • 1 Cup White Sugar
  • 1/2 Cup Brown Sugar
  • 2 Large Eggs
  • 1/2 Cup Vegetable Oil
  • 1 Tablespoon Vanilla

Ingredients For Cream Cheese Swirl:

  • 8oz Cream Cheese
  • 1/4 Cup White Sugar
  • 1 Large Egg Yolk
  • 1 Tsp Vanilla

Directions:

  • Mix all batter ingredients together
  • Put into muffin cups
  • Using a mixer or hand beater, mix together, in separate bowl, cream cheese swirl ingredients
  • Put 1-2 tablespoons (approx. no need to be exact), of cream cheese mixture in each muffin cup
  • Using a toothpick, swirl the cream cheese mixture with the pumpkin batter
  • Cook at 350 degrees for 15-20 minutes
