Apple Crumb Cake

If you like apple streusel muffins, you will love this apple crumb cake! It’s so moist and the crumble is a bit crunchy, making me think of apple crisp (which I will post later this week). A couple of things to mention…the recipe says to use a springfoam pan, if you don’t have one, that’s ok. Mine seems to have disappeared when we moved last year so I just used a regular 8″ round pan. I am sure that using a square pan would be fine too. Also it says to use parchment paper, wax paper will work just as well.

Ingredients For Cake Batter:

  • 4 Tbsp Butter or Margarine
  • 1/2 Cup White Sugar
  • 1 Large Egg
  • 1 Tsp Vanilla
  • 1 Cup Flour
  • 1/2 Cup Sour Cream
  • 1/4 Tsp Baking Soda
  • 1/4 Tsp Salt
  • 1/2 Tsp Baking Powder

Ingredients For Crumble:

  • 1 1/2 Cup Flour
  • 1/2 Cup Brown Sugar
  • 1/4 Cup White Sugar
  • 1/2 Tsp Salt
  • 1 Tsp Cinnamon
  • 1/4 Tsp Nutmeg
  • 1/2 Cup Butter or Margarine, melted
  • 1/2 Tsp Vanilla
  • 1 or 2 Apples, peeled and chopped

Directions:

  • Mix all the ingredients for the batter
  • Grease pan, line the bottom with parchment or wax paper
  • Spread half the batter in the bottom of the pan
  • Sprinkle apples on top of batter
  • Layer 1 cup of crumble on top of apples
  • Put the remaining batter on next
  • Top off with the remaining crumble
  • Cook at 350 degrees for 35 to 40 minutes or until knife/toothpick comes out clean

***Add a thin glaze or serve with icecream if desired***
