Gluten Free Cinnamon Bun Muffins

This family is a huge lover of cinnamon bun anything! These muffins were such a hit, kids had them when they got off the bus and then in their lunch the next day.  I love how the cinnamon taste is so thorough and the glaze just tops it all off!

Ingredients For Muffin Batter:

  • 2 cups Gluten Free Flour
  • 1 Tbsp. Baking Powder
  • 1/2 Tsp. Salt
  • 1/4 Cup Sugar
  • 3 Tbsp. Butter or Margarine, Melted
  • 1 Egg
  • 1 Cup Milk

Ingredients For Filling and Topping:

  • 1 Cup Brown Sugar
  • 1 Tbsp. Cinnamon
  • 3 Tbsp Butter or Margarine, Melted

Ingredients For Glaze:

  • 1 Tbsp Butter or Margarine, Melted
  • 2 Tbsp. Milk
  • 1 Cup Icing Sugar


  • Mix together all muffin batter ingredients
  • In separate bowl, mix together all filling/topping ingredients
  • Take 2/3 approx. of the filling/topping and mix it in with the muffin batter
  • Scoop into muffin tins
  • With remaining filling/topping sprinkle on top of batter
  • Cook  at 350 degrees until toothpick comes out clean (approx. 18min)
  • Mix all glaze ingredients, when muffins have cooled but are still warm, drizzle over top
