Chocolate Chip Brownie Cups

I almost didn’t share these brownie cups, not because they don’t taste good or it’s a secret recipe, but they just don’t look as pretty as I hoped. They didn’t bake up to a nice dome shape on top, but then I figured that’s kind of reality in the kitchen. Things don’t always turn out the way we want. They still taste amazing. My oldest daughter claim they taste like two bite brownies in a bigger size.


  • 1 cup butter or margarine
  • 2 cups white sugar
  • 2 tsp vanilla
  • 4 eggs
  • 3/4 cup cocoa
  • 1 3/4 cups flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 2/3 chocolate chips, divided


  • Melt butter/margarine in microwave, transfer to mixing bowl
  • add sugar and vanilla
  • add eggs
  • add remaining ingredients, except chocolate chips, mix well
  • add half the chocolate chips
  • scoop into muffin tins, sprinkle remaining chocolate chips on top
  • cook at 350 degrees for 20 minutes or until done
