Pancake Puff

If you want a quick meal for breakfast(or lunch or supper) for the whole family, this could be it. We quite often have this for supper, on a night we are in a rush.  Whip it up in the blender(mixer works too), serve with maple syrup and fruit if desired. Add a little protein (bacon, sausage, ham etc.) and your good to go!


  • 6 eggs
  • 1 cup milk
  • 1/4 orange juice(can substitute with more milk or another juice)
  • 1/2 cup sugar
  • 1 cup flour
  • 1/4 tsp salt
  • 1/2 cup butter or margarine


  • Preheat oven to 425 degrees
  • in 9×13″ baking dish put butter/margarine and melt in the oven
  • in blender (or mixing bowl) mix all ingredients except butter/margarine
  • take out pan from oven and pour in batter, put back in oven
  • bake until puffy and lightly browned
