Gluten Free Biscuits

I am so impressed with the way these turned out! This recipe is based off of my dad’s biscuit (which are to die for!), and all I did was tweak a couple of things. If you have worked with gluten free bread doughs, you would know that they tend to be a very wet dough, or at least it seems that in order get a nice moist bread, the dough needs to be wet. So I played around with the amount of milk that I put in and got it just the right moisture.

Ingredients:

  • 3 cups Compliments Gluten Free Flour
  • 1/4 cup white sugar
  • 3 tsp baking powder
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 1 tsp salt
  • 3/4 cup shortening
  • 1 egg
  • 1 cup whole milk

Directions:

  • In mixing bowl, combine dry ingredients
  • cut in shortening
  • mix in egg and milk (this can be done by hand or mixer, I did mine by hand)
  • transfer to counter to roll out, make sure you dust your space with flour, remember the dough will be wet and needs to be wet, use as little flour as possible
  • once you have rolled or pressed the dough to thickness(1/2 inch is good), use a cup(or whatever you have to make circles) to cut out the biscuit
  • put them onto cookie sheet and cook at 400 degrees for 12 to 15 minutes or until tops turn golden
