Flourless Gluten Free Banana Muffins

This was a first timer. I have never used this recipe before but its certainly is a keeper. There is definitely a different texture using the oatmeal and no flour but still good. Very moist.

Ingredients:

  • 3 bananas
  • 1/2 cup sour cream
  • 2 eggs
  • 1 tsp vanilla
  • 2 1/4 cups gluten free oatmeal
  • 1/2 cup white sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup chocolate chips

Directions:

  • Put all ingredients in a blender excluding the chocolate chips
  • Blend well
  • Add chocolate chips, stirring by hand
  • Put into greased or lined muffin tins
  • Bake at 350 degrees for 20 min or until toothpick comes out clean
