Carrot Cake and Cream Cheese Icing

Stumbled across this recipe more than ten years ago, and still haven’t found a better carrot cake recipe! The flavour, the texture, the batter, not to mention the cream cheese icing!


  • 4 beaten eggs
  • 3/4 cup oil
  • 3 cups finely shredded carrots
  • 2 cups flour
  • 2 cups sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 recipe cream cheese icing (below)


  • mix beaten eggs, oil and shredded carrots
  • add in remaining ingredients
  • mix well
  • put in 2 greased round pans and cook at 350 degrees for 30-35min or until middle is cooked

***trace round pan on wax paper, cut out and put on the bottom of both round pans(this makes getting out so much easier!)

Cream Cheese Icing


  • 1/3 cup butter/margarine
  • 2 tbsp. cream (milk or water will work too)
  • 4 cups icing sugar, more if needed


  • mix all ingredients together
  • icing should be smooth and a little firm
  • if it is quite firm and thick add a little liquid and if really thin add a little more icing sugar
