Sweet and Sour Meatballs

I don’t know about your family, but my children LOVE meatballs. I have a few different recipes I make, this one is MY favorite. The sweet and sour taste, the pineapples and sauce, served over a fluffy bed of rice…so good! Now I will admit, my children are not a fan of the pineapples, but that doesn’t stop them from having a couple servings of meatballs.

Ingredients:

  • 1 lb ground beef (or whatever ground meat you like)
  • chopped onion
  • seasoning (I just put garlic powder, salt and pepper on these but whatever you want)
  • 1 can pineapples (using only the juice for the sauce)
  • 1/2 cup brown sugar
  • 1 1/2 tsp soya sauce
  • 1 tbsp cornstarch
  • 1/4 cup vinegar

Directions:

  • mix ground beef, chopped onion, and seasoning
  • roll into little balls
  • put in 9×13 pan

Sauce:

  • in a small sauce pan, whisk the remaining ingredients (pineapple juice, sugar, soya, cornstarch, vinegar)
  • bring to boil and stir until thick and clear (you don’t want it too thick as it will thicken slightly as it cooks)
  • pour over meatballs
  • sprinkle pineapple overtop
  • cover pan with aluminum foil
  • cook at 350 degrees for 1 to 1 1/2 hrs
