Moist Oatmeal Muffins (can sub. for gluten free flour)

I have three favourite muffin recipes, School Chocolate Chip Muffins, Banana Chocolate chip Muffins and Oatmeal Muffins.  The first two I will be sure to share at a later date, but I really wanted to share this one right away because these muffins can also be used with gluten free flour. Anyone who has played around with making gluten free baking, knows how hard it can be.  So I love this recipe for its flexibility with the flours.

Super easy to make!


  • 2 eggs
  • 2/3 brown sugar
  • 1/2 cup vegetable oil/olive oil
  • 1/2 cup water
  • 1 cup flour (whichever kind you are using)
  • 3/4 cup oatmeal
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp cinnamon
  • pinch of salt
  • chocolate chips(optional)


  • mix all together
  • put into greased or lined muffin tin
  • cook at 350 degrees for 15-20 minutes


***I quite often put a few chocolate chips in but they are just as good without***
