Oatmeal Cookies

I thought of these cookies yesterday, as I was making some more applesauce.  These cookies are great on their own, but I just love having them with a bowl applesauce! You can add chocolate chips to yours if you would like, and sometimes I like to add a little cinnamon. Both are really good, and just plain is delicious too.

Ingredients:

  • Margarine or Shortening
  • Brown Sugar
  • White Sugar
  • Vanilla
  • Flour
  • Salt
  • Baking Soda
  • Water
  • Oatmeal
  • cinnamon or chocolate chips(optional)

So these are a little more finicky than most cookie recipes, not meaning they are hard to do, just a step or two more.  So let’s get started!

Beat together until light and fluffy:

  • 1 cup of Margarine or Shortening
  • 3/4 cup of Brown Sugar
  • 1/4 cup of White Sugar
  • 1 tsp Vanilla

Add:

  • 1 1/2 cups of Flour
  • 1/2 tsp Salt

Dissolve:

  • 1 tsp of Baking Soda in 1/3 cup of Boiling Water, add to above mixture.

Stir in:

  • 2 cups of Rolled Oats
  • optional: cinnamon or chocolate chips

Bake at 350 degrees until golden brown around the edges(8-10mins).
